40 grams butter (chopped)
1 small onion (finely chopped)
40 grams macadamia nuts (chopped)
2 rashers bacon (chopped)
50 grams breadcrumbs (day-old)
200grams pears (grated)
2 tablespoon fresh sage (chopped)
5 grams dried cranberries
Melt butter in a frying pan, add onion and cook over low heat for 5 minutes, add macadamia and bacon and cook a further 3 minutes or until lightly browned.
Transfer mixture to a bowl, stir in remaining ingredients and season to taste.
Cool to room temperature before stuffing into clean and dry turkey.
