Texas Pulled Pork with Apple and Fennel Slaw


Texan Pulled Pork ingredients
1 Pork Collar Butt with Texas Style Rub
1 Litre Chicken Stock
1 Bay Leaf
½ tsp Cumin seed
½ tsp Dried Oregano
6 Peppercorns
½ tsp Chilli Flakes

Apple and Fennel Slaw Ingredients
200gm Fennel, thinly sliced on mandolin.
200gm Granny Smith Apples, thinly sliced on mandolin
Juice of ½ Lemon
25ml Olive oil
Salt and Pepper
Keep some fine fronds of the Fennel for garnish on Slaw


Pulled Pork Method
• Preheat oven at 130 degrees
• Mix all ingredients together, except the pork
• Place in a tall baking dish
• Place pork in dish with liquid
• Wrap dish with foil or put on lid
• Place in oven for 4-6 hours, checking every hour
• After pork is super soft, pull out of liquid and put to side to cool
• Skim all grease off liquid and remove bay leaf
• Reduce liquid to ¼ of size
• While liquid is reducing pull the pork apart with a fork in each hand
• Add reduced liquid back to your pulled pork
Slaw Method
• Place slice Apple in bowl dress with Lemon juice to stop apple browning
• Add Sliced Fennel, Olive oil and Salt and Pepper and mix together
• Serve along side Pulled Pork.
