Roast Lamb with New Potato and Braised Cabbage


Zest of 1 Lemon
½ bunch Thyme
2 cloves of Garlic
Salt and Pepper
Olive Oil
Leg of Lamb

1kg New Potatoes
Olive Oil
1/2 bunch Parsley
4 cloves of Garlic

1 cabbage
500gm Bacon Diced
Olive Oil
Salt and Pepper to taste
1 clove of garlic
1 Brown Onion Diced


To prepare Lamb Leg
1. Chop Garlic &Thyme add to Lemon Zest
2. Rub Lamb Leg with Olive oil add cracked pepper and salt along with lemon, garlic and thyme and place in oven
3. Cook at 180 degrees for 30 min every kg
To prepare Potatoes
1. Wash potatoes leave skin on.
2. Combine with garlic, oil and parsley.
3. Put in oven for 35min at 180 degrees
To prepare cabbage
1. Roughly chop cabbage
2. In a saucepan saute onion, garlic and bacon until golden
3. Add cabbage. Cook on low heat until tender
4. Season to taste
