Ingredients:

3 x dozen freshly shucked oysters

BASIL BUTTER
60gms Unsalted Butter
2 x tablespoons chopped Fresh Basil
2 table spoons grated parmesan cheese
1 x clove peeled garlic crushed
¼ cup grated Parmesan cheese, extra

BACON AND TOMATO TOPPING
2 x bacon rashers, finely chopped
2 tablespoons tomato paste
1 tablespoon vodka
1 x teaspoon Worcestershire sauce

SOUR CREAM TOPPING
30 gm unsalted butter
1 x tablespoon olive oil
1 x clove garlic crushed
1 x cup stale bread
½ cup sour cream
¼ cup grated Mozzarella Cheese
2 x teaspoon lemon juice

Method:

BASIL BUTTER
Have butter at room temperature. Beat butter in bowl until smooth, stir in basil, cheese and garlic. divide over 12 oysters, top with extra cheese, grill until butter is melted.

BACON AND TOMATO TOPPING
Combine bacon, tomato paste, vodka and Worcestershire sauce in a bowl, divide over oysters, grill until bacon is crisp and golden brown.

SOUR CREAM TOPPING
Heat butter, oil and garlic in a pan, add crumbs, stir constantly over heat until golden brown. Combine sour cream, cheese and lemon juice in a bowl, divide over 12 oysters, sprinkle with the crumbs, grill until topping is crisp
