1.5 kg hanger steak
2 tsp sea salt
2 tsp freshly ground black pepper
1 cup extra virgin olive oil
1/2 tsp basil
1/2 tsp marjoram
1/2 tsp thyme
1/2 tsp oregano
sprig of rosemary
1/2 cup diced garlic
zest of 1 lemon
60 ml lemon juice
2 tbsp garlic powder
Season steak with salt and pepper on both sides. Trim any fat or excess skin.
Combine oil, herbs, diced garlic, lemon zest and juice in a bowl and mix well.
Marinate steak in a tray or large plastic bag for 1-2 hours.
Heat grill or start charcoals. Brush on olive oil on grill.
Remove steak from bag and sprinkle with garlic powder.
Cook steak on very hot grill, flipping every 4-5 minutes. For medium rare, cook for approximately 10 minutes but keep watch!
