Herb Crusted Tuna with Avocado Mousse and Radish and Watercress Salad


1 1kg block of Saku Tuna
Zest of 2 Lemons
Zest of 2 Limes
Zest of 2 Oranges
½ bunch of Chopped Parsley
½ bunch Chopped Dill

6 Avocado
1 Lemon zest and juice
½ cup Crème Fraiche
Salt and Pepper to taste

2 Radish finely sliced
1 bunch Watercress
1 Red Capsicum finely sliced
Soy Bean Sprouts


• Combine all zest’s and herbs
• Roll tuna so all sides are well covered
• Sear on a hot pan for 30 Seconds either side
• Set aside to cool
• Place avocado, crème fraiche, lemon zest and juice in a good processor. Blitz until smooth.
• Season to taste
• In a bowl combine radish, watercress, capsicum and sprouts. Drizzle with a tablespoon of olive oil and juice of one lemon.
• To serve finely slice tuna.
• Place some of the avocado mousse on plate. Put 3 slices of tuna then a handful of the salad mix.
