Ingredients:

4 swordfish steaks
3 tbsp olive oil
2 tsp soy sauce
1 tbsp red-wine vinegar
4 sprigs rosemary
1 tbsp garlic, minced
2 tsp coriander
1 tsp cumin
1 lemon, 4 wedges cut and rest zested
¼ tsp red pepper flakes
Sea salt
Freshly ground black pepper

Method:

Preheat grill.

Season both sides of steaks with salt and pepper.

Combine soy sauce, vinegar, rosemary, garlic, coriander, cumin, 1 tsp of zest and pepper in bowl. Place steaks on wide dish and coat both sides well in marinade. Cover with plastic wrap and leave for 10 to 15 minutes.

Grill 3-4 minutes on both sides. Serve with lemon wedges and side salad.
