5 Cups of shredded veggies – Cabbage, Carrots, Broccoli, Red Capsicum
3 Spring Onions, diced
1/3 Cup Corridor, torn
1/3 Cup Parsley, torn
1/3 Cup Mint, torn

3 tbsp Olive Oil
1 tbsp Toasted Sesame Oil
¼ Cup Rice Wine Vinegar
3 tbsp Brown Rice Syrup
1 tbsp Soy Sauce
1 Garlic Clove, finely minced
1 tbsp Ginger, finely chopped
½ tsp Chilli Flakes

Optional Toppings
Sesame Seeds, toasted
Crushed Peanuts or Cashews, roasted


Add all the main ingredients to a large bowl and toss together.

Whisk the dressing ingredients together in a small bowl.

Pour the dressing into the large bowl of mixed main ingredients.

Toss well.

Garnish with the optional toppings and serve.
