Chicken Mignon with Grape Slaw & Pinenuts
Ingredients:
4 Chicken Mignons from Fresh Meats Wises Road (plastic wrap removed)
1 pkt Beetroot Slaw. This salad option can be found in any supermarket in the salad section
10-20 green or red grapes, quartered
10-20 green beans
Handful toasted pine nuts
Grapeseed oil or Kewpie dressing (both optional)
Method:
Pre heat oven to 180 deg on the fan forced setting. This will brown the bacon beautifully.
Cook mignons for approx. 30-40 min or until golden and juices run clear.
Top and tail green beans and blanch in microwave for 2 min. Remove from water and allow to cool.
Slice beans on the diagonal into thirds.
Toast pine nuts on a medium low heat until golden. Allow to cool.
Combine the Beetroot Slaw, beans, grapes and pine nuts in a bowl. Feel free to lightly dress with the Grapeseed oil or Kewpie dressing.
Plate up the Mignons with the salad on the side and drizzle a small amount of the pan juices over the Mignon to make it shine.
This dish can be dressed up by serving a light jus and some spectacular summer salads like:
Prosciutto and Pear salad
Potato, bacon and chive salad
Corn and chilli salad
Bean, tomato and baby mozzarella salad
