3 tsp cornstarch / corn flour
2 tbsp + 1/3 cup water, separated
2 tbsp soy sauce
1 tbsp oyster sauce
2 tbsp Chinese cooking wine OR Mirin
1 tsp white sugar
1/2 tsp sesame oil
Dash of black pepper
2 tbsp peanut oil
1 garlic clove, crushed
200g beef stir fry strips
1/2 small red onion, sliced
1/2 yellow capsicum, sliced
5 baby carrots
3 baby bok choy, quartered
2 spring onions, cut finely
Combine cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
Mix in remaining Sauce ingredients EXCEPT 1/3 cup water.
Use 2 tbsp of sauce to marinate beef in a bowl. Mix gently and set aside for 15 minutes.
Pour 1/3 cup water into remaining sauce. Set aside.
Heat oil in pan or work over high heat. Cook garlic for 15 seconds.
Add onion and cook for 1 minute.
Add beef and saute until colour changes but not yet cooked through.
Stir in bell pepper and carrots, then pour in sauce and stir.
Add bok choy and spring onions/shallots and cook for a further 1 minute.
Remove from heat and serve immediately with rice.
*Can garnish with thinly sliced chilli and/or fresh coriander.
