Balsamic Bacon Jam


500g bacon
1 small onion, diced
6 cloves of garlic, diced
1/2 cup brown sugar
1/2 cup red wine
1/4 cup maple syrup
4 tbsp balsamic vinegar
1 tbsp whole grain mustard


Roughly chop bacon and cook in pot to render out fat.

Remove bacon and place on paper towel-lined plate.

Pour out most of the grease from the pot. Fry onion and garlic in remaining grease.

Add remaining ingredients and simmer over low to medium heat.
