If you ask your butcher what their favourite cut of steak is, more often than not you’ll hear the same answer – scotch fillet! A tender, and juicy cut of steak, with just the right amount of fat (which also makes it one of the more forgiving cuts of steak when it comes to any overcooking!). Scotch fillet is best-served medium (4 – 5 mins each side).
Rest for at least 10 mins with foil over the top to allow for juices to settle back into the meat. These steaks will be a minimum of 300g each and come to you in a bag with approximately 3 days shelf life when kept in your refrigerator.
