Salted Calamari

Ingredients:

100gms Fresh bread crumbs
800gms of Calamari Rings
100gms plain flour
2 whole fresh eggs lightly whisked
2 tablespoons water
1 tablespoon of sea salt flakes
2 x nori sheets finely chopped
Vegetable oil for deep frying

Method:

1/ rinse the squid rings and pat dry with paper towel.
2/ line a baking try with non-stick baking paper. Place the flour on a plate. Combine the egg and water in a swallow bowl. Combine the breadcrumbs, Salt and Nori on a separate plate. Coat the Calamari rings with the plain Flour. Dip into egg mixture, the into the bread crumb mixture, pressing firmly to coat. Place on the prepared tray.
3/ Add enough oil to a medium saucepan to reach a depth of 6 cm. Heat to around 190 degrees over medium heat(oil is ready when a small amount of bread crumbs turns golden brown in 10 seconds)
4/ Add small amounts of the crumb calamari to the oil and cook for around 2-3 minutes or until crisp and golden. Transfer to baking tray with lined paper towels. Repeat with the remaining calamari.
Note: Make sure you let the oil come bake up to tempura in-between each batch cook. Serve with fresh lemon or lime wedges
